Ingredients (serves 4–6)

  • For the Fried Chicken: 6–8 bone-in chicken thighs or drumsticks
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 Tbsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Oil for frying (peanut or vegetable)
  • For the Coca-Cola Onion Gravy: 2 large onions, thinly sliced
  • 3–4 cloves garlic, minced
  • 1 (12-oz) can Coca-Cola (regular)
  • 2 Tbsp butter
  • 2–3 Tbsp flour
  • 1 cup chicken broth
  • Salt & pepper to taste
  • Optional: splash of Worcestershire sauce

How to Make Fried Chicken with Smothered Coca-Cola Onion Gravy

  1. 1. Soak the chicken in buttermilk for at least 1 hour (or overnight if you can).
  2. 2. Mix flour with salt, pepper, garlic powder, and smoked paprika. Dredge each piece of chicken in the seasoned flour.
  3. 3. Heat about 1 inch of oil in a large cast-iron skillet. Fry the chicken until golden and crispy (about 6–8 minutes per side). Remove and set aside on a wire rack.
  4. 4. Pour off most of the oil, leaving about 3–4 Tbsp. Add sliced onions and cook until soft and caramelized, about 10 minutes. Add garlic and cook 1 minute.
  5. 5. Sprinkle in the flour and stir for 1–2 minutes. Slowly pour in the Coca-Cola and chicken broth while whisking. Simmer until the gravy thickens.
  6. 6. Nestle the fried chicken back into the gravy. Cover and simmer on low for 15–20 minutes so the chicken soaks up all that Coca-Cola goodness.
