This here is Southern comfort food at its finest. Crispy fried chicken smothered in a rich, sweet-savory Coca-Cola onion gravy. The cola cooks down into this sticky, caramelized goodness that makes the gravy taste like nothing you’ve ever had before.
Ingredients (serves 4–6)
- For the Fried Chicken: 6–8 bone-in chicken thighs or drumsticks
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 Tbsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Oil for frying (peanut or vegetable)
- For the Coca-Cola Onion Gravy: 2 large onions, thinly sliced
- 3–4 cloves garlic, minced
- 1 (12-oz) can Coca-Cola (regular)
- 2 Tbsp butter
- 2–3 Tbsp flour
- 1 cup chicken broth
- Salt & pepper to taste
- Optional: splash of Worcestershire sauce
How to Make Fried Chicken with Smothered Coca-Cola Onion Gravy
- 1. Soak the chicken in buttermilk for at least 1 hour (or overnight if you can).
- 2. Mix flour with salt, pepper, garlic powder, and smoked paprika. Dredge each piece of chicken in the seasoned flour.
- 3. Heat about 1 inch of oil in a large cast-iron skillet. Fry the chicken until golden and crispy (about 6–8 minutes per side). Remove and set aside on a wire rack.
- 4. Pour off most of the oil, leaving about 3–4 Tbsp. Add sliced onions and cook until soft and caramelized, about 10 minutes. Add garlic and cook 1 minute.
- 5. Sprinkle in the flour and stir for 1–2 minutes. Slowly pour in the Coca-Cola and chicken broth while whisking. Simmer until the gravy thickens.
- 6. Nestle the fried chicken back into the gravy. Cover and simmer on low for 15–20 minutes so the chicken soaks up all that Coca-Cola goodness.
