Coca-Cola Chicken is one of them dishes that sounds crazy but tastes downright addictive. The cola cooks down into a sweet, sticky, tangy glaze that coats the chicken perfectly. It’s cheap, easy, and makes the whole house smell amazing.
Ingredients (serves 4–6)
- 6–8 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)
- 1 large onion, sliced
- 3–4 cloves garlic, minced
- 1 (12-oz) can Coca-Cola (regular, not diet)
- ½ cup ketchup
- ¼ cup soy sauce
- 2 Tbsp Worcestershire sauce
- 2 Tbsp brown sugar (optional, for extra caramelization)
- 1 tsp smoked paprika
- ½ tsp black pepper
- 2 Tbsp oil or bacon grease for browning
How to Make Coca-Cola Chicken
- 1. Season chicken well with salt, pepper, and smoked paprika.
- 2. Heat oil or bacon grease in a large skillet or Dutch oven over medium-high heat. Brown the chicken on both sides (you don’t need to cook it through yet). Remove and set aside.
- 3. In the same pan, cook sliced onions until softened, about 5–6 minutes. Add garlic and cook 1 minute more.
- 4. Pour in the Coca-Cola, ketchup, soy sauce, Worcestershire, and brown sugar. Stir well and bring to a simmer.
- 5. Nestle the chicken back into the sauce. Cover and simmer on low for 35–45 minutes, turning occasionally, until the chicken is tender and the sauce has thickened into a beautiful sticky glaze.
- 6. For extra sticky skin, uncover for the last 10 minutes or broil for 2–3 minutes at the end.
Holler Tips from Cletus
- Use regular Coca-Cola — diet versions don’t caramelize the same.
- Bone-in thighs stay juicier, but you can use boneless if that’s what you got.
- The sauce thickens as it cools — don’t worry if it looks thin at first.
- Serve over rice, mashed potatoes, or with biscuits to soak up that gravy.
